Paul Germain has been studying and collecting fruit and vegetable carving books since he first started training as a Garde Manger Chef over 35 years ago. The AICD library is filled with over 80 of the most artistic and creative fruit and vegetable carving books and DVD's that have ever been published - some of which are no longer being printed.
Students have the rare opportunity to learn and be inspired from over 20,000 instructional photographs of incredible food artistry from around the world. This is also very helpful in making it possible for students to know which books and DVD's
they may want to purchase.
AICD's library also offers many excellent books and DVD's for developing drawing and portrait carving skills.
